After sampling the grapes from our Ballandean supplier, we just knew that we had to produce a full boddied red wine to reflect the quality of these grapes. Our 2016 Merlot was hand harvested early in the morning to maintain the quality of the fruit. The grapes were then transported to our production facility by refrigerated truck.
The grapes were hand sorted to ensure quality was maintained and were fermented slowly at cool temperatures to maintain the fruit characters of the grapes. Using traditional winemaking techniques, the grapes were hand plunged to extract the deep colours and black fruit aromas.
After fermentation the grapes were basket pressed and american oak used to produce coffee and mocha aromas with a velvety tannin structure. Try this wine with lamb shanks, pearl couscous and pumpkin mash. We recommend decantering the wine before serving.
