After sampling these grapes, we knew that we had a winner on our hands and so the Morgan and Gill 2016 Cabernet Sauvignon was harvested very late in the season to produce a very full bodied red wine. After only 3 hours sleep, Tim and our team of pickers, Hand harvested the fruit early in the morning to ensure that the fruit was at its optimum quality and the fruit flavours of black fruits were maintained prior to transportation to our contract wine making facility.
The grapes were hand sorted before being destemmed and crushed and then fermented in a temperature controlled stainless steel vat, to ensure a smooth and efficient fermentation and to bring out the fruit flavours of blackcurrant and liquorice. Use of American oak has given this Cabernet beautiful aromas of mocha and cigar box and it has developed a soft chalky tannin structure.
This wine would pair well with an Argentinian style BBQ and to enhance the qualities of the wine, we recommend decantering of this wine
