Our 2017 Wild Ferment Chardonnay was produced using grapes sourced from a single vineyard in the South Burnett region of Queensland. These grapes were harvested during the cool of the night, using the latest mechanical harvesters and transported to our contract winery facility for processing. 

We allowed Spontaneous fermentation to occur from the native yeasts of the vineyard and the winery, which have given a unique character to the wine. Slow cool fermentation  and careful use of French oak has produced a lightly wooded, fruit driven wine style, which is ideally suited to the Queensland climate.
